2oz ALL POINTS WEST MALT & GRAIN POT STILL WHISKEY

¼oz simple syrup

5 dashes Peychaud’s bitters

Absinthe bitters or absinthe

1 lemon peel

Spray serving glass with 7 sprays of absinthe bitters or do an absinthe rinse; place ice rocks in serving glass and set aside.

Stir first three ingredients with ice in cocktail mixing glass.

Dump ice from serving glass, then strain cocktail into serving glass.

Express lemon peel; leave out.

2oz ALL POINTS WEST MALT & GRAIN POT STILL WHISKEY

¼ oz honey

½ tsp warm water

2 dashes Angostura bitters

1 orange peel

Stir first 4 ingredients in serving glass until dissolved; add large ice cube, stir for 20 seconds; express one orange peel and leave in as garnish.

1 ½oz ALL POINTS WEST MALT & GRAIN WHISKEY

1 ½oz lemon juice

¾oz simple syrup

¾oz egg white

1 lemon peel

Shake first 4 ingredients vigorously for min. 30 seconds. Strain into serving glass over clean ice. Express lemon peel and leave in as garnish.
