Named after Horace J. Poinier, who served from 1854 to 1857 as the 11th Mayor of Newark, NJ

2oz ALL POINTS WEST MALT & GRAIN POT STILL WHISKEY

¼oz simple syrup

5 dashes Peychaud’s bitters

Absinthe bitters or absinthe

1 lemon peel

Spray serving glass with 7 sprays of absinthe bitters or do an absinthe rinse; place ice rocks in serving glass and set aside.

Stir first three ingredients with ice in cocktail mixing glass.

Dump ice from serving glass, then strain cocktail into serving glass.

Express lemon peel; leave out.
